When you cook meats on a grill they will dry out. This loss of moisture starts on the surface and works it way to the center of the meat. The moisture either evaporates or is driven to the center of the meat. By allowing the meat to rest after removing from the grill allows the moisture to return. For meats 1-2 inches thick allow to rest at least 5 minutes, for roasts or small poultry 10-20 minutes should do the trick, for large birds like turkey 20-30 minutes rest will be perfect.
