To add flavor to your grilled meal add some smoke from an aromatic hardwood such as, mesquite, hickory, or oak chips. You can also use an aromatic fruit wood such as, apple, cherry, even citrus or vine cuttings. Soak the chips or chunks in water for at least 30 minutes. If you are using a charcoal grill simply add soaked wood to hot coals. If you are using a gas grill wrap wood chips or chunks in aluminum foil sealing the edges. Slice some vent holes in the top and place directly on the burner.
