Traditional Tri-Tip Recipe

1 Tri-Tip Roast ( 1 1/2 to 2lb. ) trimmed

Garlic Seasoning ( I like McCormick® Salt Free Garlic Herb Seasoning )

Cover Tri Tip liberally with salt, pepper, and garlic mixture, adjust amount of each seasoning to your taste.  Let Tri Tip sit and marinade in the seasonings in refrigerator for at least 1 hour, this can be done the night before if you like.  Remove from refrigerator and let sit for 15 minutes at this time light grill and preheat for 15 – 20 minutes.  Set-up grill for indirect grilling.  If your grill has a sear burner than fire it up as well.  Place Tri Tip on grate over the high heat and sear for 5-6 minutes on each side watching carefully for flare-ups.  Once the the roast is seared move the Tri Tip to the indirect side of the grill and continue cooking for 10 minutes. Turn the Tri Tip and continue to cook to desired doneness place an instant read thermometer check into thickest part of the Tri Tip until it reads 130°F.  Remove roast from grill and let sit for 15 minutes.  Then slice into thin slices cutting across the grain and serve.
