Recipes from a Master
The following recipes were given to me by a friend Nancy whose husband Beau was a chef at one time. He is now the Master Chef and Grill Master solely for the Bills family. The recipe is for Bacon Wrapped Scallops and the ultimate New York Steak.
Bacon Wrapped Scallops
Scallops (we get them from Costco in the frozen dept.)
Bacon
Salt
Pepper
Melted Butter (cooled down)
Wrap the sides of the scallops with bacon. Salt and Pepper both sides. Melt butter and let it cool down. Brush cooled butter on top of one side of the scallops. Refrigerate overnight. Put on grill when ready to eat. Do not over grill.
So, what does he mean when he says “don’t over grill”! Scallops do not take very long to cook. SO DON’T WALK AWAY FROM THEM WHEN THEY ARE ON THE GRILL! Or you will end up with some very rubbery scallops.

Tenderize the steaks. Salt and Pepper both sides. Melt butter and let it cool down. Brush cooled butter on top of the steaks. Refrigerate overnight. Grill the steaks according on preference.
Because of the butter on these you DO NOT want to walk away from these either. Unless you prefer blacken steaks and I don’t mean cajon style!
