Grilled Sausage with Peppers and Onions


6 – Italian Sweet or Hot Sausage
1 – Green Pepper
1 – Yellow Pepper
1 – Red Bell Pepper
1 – Large Red Onion sliced into 1/4 inch rounds
2-3Tbsp Olive Oil
6 – French Rolls
Spicy Mustard

Preheat grill on high for at least 15 minutes. Roast peppers directly over high burner until skin is charred and blistered on all sides. Remove from grill and place in a baking dish and cover with plastic wrap or place in a freezer bag and seal. Let sit for 15-20 minutes and come to room temperature. Peel off charred skin, remove seeds and slice into 1/4 inch strips.
Brush sliced onion with olive oil and grill over a medium heat for 3-4 minutes until tender and golden brown. Remove from grill. Slice onions in half, and in a large bowl, add to peppers and set aside.

Lower heat to medium.

IMG_0659bPlace sausages on grill and cook for 2-3 minutes per side. Do not wander too far away from the grill as you will have flare-ups and when this happens simply remove the sausage to a cooler side of the grill until flare-up subsides. If you want to toast the buns, just before sausages are done, place open rolls on grill, this is optional. Remove rolls, add sausage, top with pepper and onion mixture and mustard.
You can use other sausages including Andouille (a spicy creole sausage), Bratwurst, Chicken, etc… Mix it up and and add other toppings such as pickles, tomatoes, or maybe a pepper jack cheese have fun, enjoy!
